The Story

A pit, post oak, and no shortcut.

This Austin spot grew from a modest trailer. The formula has never changed: whole packer briskets, pork ribs, jalapeño cheddar sausage, pulled pork, and turkey, all smoked low and slow over post oak wood, every single day.

The smokehouse never stops. Staff rotate through the night keeping watch over the briskets. By the time doors open at 11 AM, the meats have been on the pit for hours. When they're gone, they're gone. That's not a gimmick. It's just how it works.

The Brisket

Order it fatty. The bark holds a deep smokiness and the interior stays so tender customers reach for words like "buttery" and "like butter in my mouth." Served thick-sliced, with visible juices pooling on every cut. The burnt ends of the point hit first.

Jalapeño Cheddar Sausage

Great snap, fine-ground black pepper, and just the right amount of cheese and spice. A consistent standout alongside the brisket, with its own smoky character.

Beef Rib & Pork Ribs

The beef rib runs massive and tender with incredible smoke and bark. Pork ribs are fall-off-the-bone, smoky, and have surprised more than a few guests expecting them to be an afterthought.
